popeye chicken salad


I had some crave for popeye chicken, well, the truth was more of being enticed by the coupons they sneaked into my mail box. It was pretty greasy, which was a known fact without spelling it out loud. To accommodate hot days, I made a salad with it ---

1. roman lettuce, chopped, washed and drained (the salad spinner worked really great, except sometimes small leaves got caught and stuck in the basket and took longer than just rinsed it clean. Also, occasionally small leaves found their ways into the middle of top spinning lid and decided to stay there. I have not found a great way to force those tiny bits out yet :| )

2. iceberg lettuce, chopped, washed and drained

3. red pepper, cleaned and diced (did not have tomato in the fridge)

4. carrots --- julienned with chef's knife, I could have used some shredding tool, but since it's small amount, I was lazy to wash extra tool than the knife I was already using

5. Queen Spanish Olives --- sliced. I most often used this in salad, and I almost always sliced them. As a result, I wondered why didn't I just buy those Spanish olives pieces instead of big queen sized ones? No real answer except they looked nicer and appeared to be better quality?

6. Egg --- soft boiled and crushed. The softer egg yolk really gave a nice vivid color.

7. Honey mustard salad dressing + some shredded 4 cheese + dash of salt + freshly ground black pepper.

8. popeye chicken (leg and thigh) --- toasted, removed most skins and fat and bones.

Assembled my salad with items 1-7, places item 8 on top. Since the chicken was hot, and salad served as a cold base, they were not suppose to be tossed all together.

It looked pretty and prompted me to post this blog. And yes it's yummy!
